Pimento Cheese Grilled Cheese Sam'wiches

Hi.... don't hate me because I haven't posted in awhile.  Here's a tasty recipe to try when you need something quick for dinner or a weekend lunch!  

Pimento Cheese Grilled Cheese Sammies
Serves 2
4 oz cream cheese (1/2 a block)
2 T. mayo
4 oz. shredded cheddar
cayenne pepper
2 oz pimentos, drained
4 slices bread
Stir together cream cheese, cayenne and mayo, then add shredded cheddar and pimentos.  Return mixture to refrigerator to set up.  Butter 4 slices of bread, spread mixture between slices.  Grill in a pan over medium heat until golden brown.  Goes extremely well with Pacific Foods Roasted Red Pepper & Tomato Soup!
